These potatoes are green because of large doses of chlorophyll they contain. Studies show that green potatoes contain solanine in large amounts. Solanine is a toxic chemical that causes nausea, headaches, diarrhea, vomiting, and many other ailments when consumed.

The green color is caused by chlorophyll, which is largely harmless for you. However, solanine is produced at the same time as chlorophyll, and the color can indicate that like chlorophyll, the amount of solanine has also increased.

A professor at the University of Nebraska, Pavlista Alexander, said green potatoes should never be sold, and that generally potatoes should be stored in a cool, dark place to prevent solanine from being produced.
