I find vegan cakes are more delicious than usual cakes baked with eggs and butter. I bet you are going to enjoy them also.

Chocolate cake are loved by almost everyone, licking the spatula or bowl is one of the delights of this masterpiece. I must confess that I was skeptical when I was offered this recipe, because it just didn’t sound right. The thought of a butter-free and egg-free chocolate cake was quite hard to believe. It was one of the few times I have been wrong about food.

To try out my baking skills, I got right into this recipe. I tried baking with avocado and found out that I can make a lovely chocolate cake and chocolate frosting with avocado without traditional ingredients.

It requires a method that requires using your hands but I was not bothered about licking my fingers, since it does not contain raw eggs. The lovely aroma of chocolate was pleasant.

When both my kids tasted it, they wanted more! They were literally licking their pates. The chocolate cake had a smooth consistency almost like pudding.

The frosting was so rich, with just cocoa powder, avocado and sugar but when added with the cake, it tired out perfect. The pairing is nothing short of perfect. It is a great way to get over the guilty feeling of eating the fatty traditional chocolate cake.

Ingredients

For the Cake:

  • Two Tbsp of baking powder
  • Five Tbsp of dark chocolate cocoa powder
  • Two Tbsp of vanilla extract
  • Two Tbsp of baking soda
  • Three cups all-purpose flour
  • Half Tbsp of kosher salt
  • Quarter cup coconut or avocado oil
  • One ripe avocado; mash it till smooth
  • Two cups water
  • Two Tbsp of white vinegar
  • Two cups coconut sugar or raw cane.  You can use less if you don’t want it to be too sweet.
  • Frosting
  • Two cups confectioner’s sugar – (or less)
  • Two ripe avocados, mashed until smooth
  • Five Tbsp of  dark chocolate cocoa powder

Preparation

Grease and flour two 9” round cake pans. Preheat oven to 350.

whisk the first five ingredients in a large bowl.

whisk canola oil in another bowl and the next four ingredients. add sugar after you have properly mixed all the ingredients.

Pour the avocado mixture into the flour mixture, mix well until it is smooth. Share the batter evenly into two cake pans. Bake cake in two 9” round cake pans, after 30 minutes check for doneness .

Leave the cakes to cool before you begin frosting. Then after 15 minutes turn it out to cool off completely. Add the frosting on each cake and then to the top of cake.
