Are you in search of a sumptuous meal without any fat? Well, you can take a peek at this excellent salad preparation, which offers a great combination of fiber, proteins and greens. The recipe is also quite simple and is provided below:
- Take one sweet potato of large size
- Get four beets peeled
- A quarter cup of pecans nicely chopped
- A quarter cup of unsweetened cranberries completely dried
- 1 head kale perfectly chopped
- Half cup of quinoa properly cooked
- Two-tablespoon coconut oil
- Pepper and salt
For dressing, you need to take Apple cider vinegar, limejuice, and quarter cup of olive oil and one tablespoon of wasabi.
Heat your oven at a temperature of 180C. Then cut potatoes in cubes, each of 3cm. Now, add it with the fresh dice. Take a baking sheet and apply pepper, coconut oil as well as salt. Put the potato dices on the baking sheet. Bake them in the oven for around 45 minutes so that it softens. While the potatoes are baking, you need to blanch the kale and put the chopped kale in boiling water. Stir it for 2 or 3 minutes and drain it. Wash kale using cold water. Now you need to take a large bowl for pouring quinoa, kale, cranberries, pecans, beets and sweet potatoes. Blend the total dressing for around 30 seconds before applying it on the salad. Toss the salad properly to relish its taste.
